Anvanca Diet – Day 26: Total Calories 1500

Breakfast:  The goal of a good low carb breakfast is the balance between saturated fat and protein.  Protein and fat can help you feel satisfied, and protein can help you be more alert in morning. The challenge is to keep the saturated fat content as low as possible while still provide some variety.

Total Calories: 519, Protein: 41g, Carbs: 23g, Fat: 14g.

Anvanca® Huevos Rancheros

4 egg whites

½ cup of Salsa

2 Low Carb Tortillas

Salt

Pepper

Spray a skillet with a non-fat cooking spray and heat it on medium until hot.  Scramble eggs and cook on the skillet.  While still warm, add the eggs to the tortillas and top with the cheddar.  Once the cheddar has started to melt, add ½ the salsa.  Roll the tortillas and add the remainder of the salsa. Serve.

Protein Boost:

Add a ½ scoop of whey protein to 8oz of Almond milk, and mix well.

Lunch: The goal of a good lunch is the balance between protein, fiber, and fat.  Given the low number of carbs, we can see an insulin spike.  We provide for a mid-day snack so that you can keep your blood sugar stable.  Total Calories:  375, Protein: 57g, Carbs: 11g, Fat: 9g

Ham Rotisserie Style:  You are permitted 6 slices – 3 ounces of lean ham rotisserie carved.   Finish the meal with a 1 cup of 1% fat cottage cheese.

Snack: Almonds (1oz), which is roughly 20 pieces.  Calories: 169, Protein 6.3g, Carbs 3.3g, Fat 15g,

Dinner: Calories 392, Protein 53g, Carbs 23g, Fat 14g

Pesce Spangolo (serves 3):

Ingredients

1-1/2 teaspoons olive or canola oil

1/2 large onion, thinly sliced

1 tablespoon diced pimientos

3 (6 ounce) fillets sea bass or halibut

1/2 teaspoon salt

1/8 teaspoon ground mace

1/8 teaspoon cayenne pepper

1/8 teaspoon pepper

3 tomatoes

1/2 cup thinly sliced fresh mushrooms

1 tablespoon and 1-1/2 teaspoons chopped green onions

2 tablespoons white wine or chicken broth

2-1/4 teaspoons butter or stick margarine

1/4 cup dry bread crumbs

2 cup of Tossed Salad

2 tablespoons of Lite Italian Dressing

Directions

Brush oil onto bottom of a 13-in. x 9-in. x 2-in. baking dish; top with onion and pimientos.  Pat fish dry.  Combine the salt, mace, cayenne and pepper; sprinkle over both sides of fish.  Arrange fish over onions and pimientos.  Top each fillet with a tomato slice; sprinkle with mushrooms and green onions.  Pour wine or broth over fish and vegetables.  In a nonstick skillet, melt butter; add bread crumbs.  Cook and stir over medium heat until lightly browned.  Sprinkle over fish.  Cover and bake at 350 degrees F for 20 minutes.  Uncover and bake 20-25 minutes longer or until fish flakes easily with a fork.  Serve with salad.
