Anvanca Diet – Day 16: Total Calories 1525
A veggie loaded egg-white omelet gets you started today followed by a roast beef sandwich for lunch. This evening, dinner is Greek mussels, linguini, and broccoli – a real Mediterranean treat.
Breakfast: The goal of a good breakfast is the balance between fiber and protein. The combination of which has been shown to keep you feeling fuller, longer, so you eat less.
Anvanca® Basic Egg White Omelet
3 Egg whites
Favorite chopped veggies: onions, mushrooms, green peppers, etc.
1 slice of reduced fat cheddar cheese
PAM or non-stick cooking spray
2 Slices of Multi-Grain, Whole-Grain bread
1 pat of reduced fat/non fat spread
Pre-heat a skillet. Spray with non-stick cooking oil. Add veggies and egg to a bowl. Mix well. Add Salt and Pepper (I recommend garlic salt). Pour egg mixture into the skillet. Add bread to the toaster. When cooked on one-side, flip the omelet. Add the cheese to the top. Fold the omelet and serve. Add butter to the toast.
Lunch: The goal of a good lunch is the balance between protein, fiber, and fat. The key is not to overeat to avoid an insulin spike. We provide for a mid-day snack so that you can keep your blood sugar stable.
The Smart Roast Beef Sandwich: You are permitted 6 slices of lean roast beef on two slices of whole grain, multi-grain bread. Add any veggie you like. Do not add cheese. Only mustard is allowed as a condiment.
Add an apple for something sweet.
Snack: Pistachios (0.5 oz), which is approximately 25 nuts. Calories: 81, Protein 3g, Fiber 1.5g, Fat 6.5g,
Anvanca® Greek Mussel & Linguini with Broccoli: (Serves 4)
1 tablespoon olive oil
4 shallots, thinly sliced
2 pounds mussels, cleaned and debearded
1/2 cup dry white wine
1 cup finely chopped Italian leaf parsley
1 cup greek yogurt
8oz of linguini
2 cup of cooked broccoli
In a large pot, over medium heat, sweat the shallots in olive oil until translucent. Raise the heat to high and add all of the mussels; cover and cook for 3 to 5 minutes, or until all of the mussels have opened. Take off the heat and transfer the mussels to a serving dish, leaving the liquid in the pot. Return the pot to the heat and add the wine and parsley to the liquid. Bring to a boil and reduce by 1/3. While reducing, cook the linguini in boiling water for around 8 minutes, less if you like al dente. Remove and drain. Take the pot off the heat and stir in the yogurt. Mix thoroughly. Pour the sauce over the mussels and linguini. Cook the broccoli according to the package instructions ( 1 serving is ½ cup)
Dessert: ½ cup of Slow Churn Vanilla Ice Cream with 1 cut banana:
