Anvanca® Diet: Male Vegetarian (Ovo-Lacto) Day 16

Eggs get us started today.  We follow with a veggie wrap for lunch.  Tonight’s diner is a treat – vegetarian lime orzo – a delicious, vitamin packed meal.

Anvanca Diet – Day 16: Total Calories 1550

Breakfast:  The goal of a good breakfast is the balance between fiber and protein.  The combination of which has been shown to keep you feeling fuller, longer, so you eat less.

Anvanca® Basic Egg White Omelet

3 Egg whites

Favorite chopped veggies: onions, mushrooms, green peppers, etc.

1 slice of reduced fat cheddar cheese

PAM or non-stick cooking spray

2 Slices of Whole Wheat Bread

1 pat of reduced fat/non fat spread

Pre-heat a skillet.  Spray with non-stick cooking oil.  Add veggies and egg to a bowl.  Mix well.  Add Salt and Pepper (I recommend garlic salt).  Pour egg mixture into the skillet.  Add bread to the toaster.  When cooked on one-side, flip the omelet.  Add the cheese to the top.  Fold the omelet and serve.  Add butter to the toast.

Top it off with a Fiber One Snack Bar

Lunch: The goal of a good lunch is the balance between protein, fiber, and fat.  The key is not to overeat to avoid an insulin spike.  We provide for a mid-day snack so that you can keep your blood sugar stable.

Re-heat or make one veggie wrap from the day 2 Meal Plan

Snack: Pistachios (0.5 oz), which is approximately 25 nuts.  Calories: 81, Protein 3g, Fiber 1.5g, Fat 6.5g,

Dinner:

Vegetarian Lime Orzo

Ingredients

2 tablespoons olive oil

2 cloves garlic, minced

2 cups orzo pasta

1 zucchini, peeled and shredded

1 carrot, peeled and shredded

1 (16 ounce) can stewed tomatoes, undrained

1 (14 ounce) can vegetable broth

1 teaspoon Italian seasoning

1 teaspoon dried basil leaves

salt and black pepper to taste

1/4 cup chopped green onions

1/4 cup chopped fresh parsley

2 teaspoons grated lime zest

2 tablespoons lime juice

1/2 cup grated Parmesan cheese for topping

Directions

Heat the olive oil in a large skillet over medium-high heat.  Stir in the garlic and orzo pasta; cook and stir until pasta turns a light, golden color, about 5 minutes.  Stir in zucchini and carrots; cook until vegetables soften, about 2 minutes.  Stir in the tomatoes, vegetable broth, Italian seasoning, and basil.  Season with salt and pepper to taste.  Reduce heat to medium.  Cover, and simmer until almost all liquid is absorbed, about 10 minutes.  Stir in the green onions, parsley, lime zest, and lime juice.  Remove from heat, cool slightly, and serve sprinkled with Parmesan cheese.
