Anvanca® Diet: Male Vegetarian (Ovo-Lacto) Day 06

Eggs and toast are a great combination of protein and fiber.  Together they should give you staying power.  For lunch, we’ll have a veggie wrap.  For dinner, it’s vegetarian meatloaf.

Anvanca Diet – Day 6: Total Calories 1488

Breakfast:  The goal of a good breakfast is the balance between fiber and protein.  The combination of which has been shown to keep you feeling fuller, longer, so you eat less.

Anvanca® Basic Egg White Omelet

3 Egg whites

Favorite chopped veggies: onions, mushrooms, green peppers, etc.

1 slice of reduced fat cheddar cheese

PAM or non-stick cooking spray

2 Slices of Whole Wheat Bread

1 pat of reduced fat/non fat spread

Pre-heat a skillet.  Spray with non-stick cooking oil.  Add veggies and egg to a bowl.  Mix well.  Add Salt and Pepper (I recommend garlic salt).  Pour egg mixture into the skillet.  Add bread to the toaster.  When cooked on one-side, flip the omelet.   Add the cheese to the top.  Fold the omelet and serve.  Add butter to the toast.

Top it off with a Fiber One Snack Bar

Lunch: The goal of a good lunch is the balance between protein, fiber, and fat.  The key is not to overeat to avoid an insulin spike.  We provide for a mid-day snack so that you can keep your blood sugar stable.

Re-heat or make one veggie wrap from the day 2 Meal Plan

Snack: Pistachios (0.5 oz), which is approximately 25 nuts.  Calories: 81, Protein 3g, Fiber 1.5g, Fat 6.5g,

Dinner:

Vegetarian Meatloaf Dinner

Ingredients

1/2 (14 ounce) package vegetarian ground beef (e.g., GimmeLean TM)

1 (12 ounce) package vegetarian burger crumbles

1 onion, chopped

2 eggs, beaten

2 tablespoons vegetarian Worcestershire sauce

1 teaspoon salt

1/3 teaspoon pepper

1 teaspoon ground sage

1/2 teaspoon garlic powder

2 teaspoons prepared mustard

1 tablespoon vegetable oil

3 1/2 slices bread, cubed

1/3 cup milk

1 (8 ounce) can tomato sauce

4 carrots, cut into 1 inch pieces

4 potatoes, cubed

1 cooking spray

Directions

Preheat oven to 350 degrees F (175 degrees C).  In a large bowl combine vegetarian ground beef, vegetarian ground beef crumbles, onion, eggs, Worcestershire sauce, salt, pepper, sage, garlic powder, mustard, oil, bread cubes and milk.  Transfer to a 9 x 13 inch baking dish and form into a loaf. Pour tomato sauce on top.  Place carrots and potatoes around loaf and spray vegetables with cooking spray.

Bake 30 to 45 minutes; turn vegetables. Bake another 30 to 45 minutes.  Let stand 15 minutes before slicing.

1 cup of cooked brown rice

1 cup of cooked green beans

While the meatloaf is in the oven, cook the rice and beans.

Have 1 serving of meatloaf with the rice and green beans.
